I smoked a 12 lb Choice packer yesterday. It was injected with Butcher Brisket Injection and rubbed with TXBBQ Brisket Rub. Smoked it with Hickory to an internal of 168...foiled it and finished it to 202. This was hands down, the best brisket I'ver ever tasted and I've smoked a LOT of briskets. |
