Tom McAliney - Executive Chef
As a chef, I have always based my cuisine on one fundamental principle. That is to seek out the best ingredients available to me and prepare them in a way that enhances the fundamental flavor of the ingredient. This philosophy has served me well. I have always been a proponent of fresh, seasonal and local sourcing, working with responsible farms and ranches directly whenever possible. These guidelines are in essence the foundation for my relationship with Brandt Beef. We believe in raising our animals as nature intended, at their own pace without interference and creating a superior product. In this way, we once again connect the chef with the land, by providing the best ingredients. Read bio
