Wafu Steak Sauce

Serves 10 -12 (as hors doeuvres)

Cooking Time: 15 minutes

10 ounces Soy Sauce
2 ounces Sake
1 ounces Mirin
2 Cloves Fresh Garlic chopped
1 Each Fuji Apple
1 Each Medium sized sweet onion
1 Tablespoon Granulated sugar
1 Tablespoon Salad oil

Peel and dice both onion and apple. In a heated medium sauce pan, add oil, apple, onion and garlic. Sauté for about 3 to 5 minutes until onion turns translucent without browning more than slightly. Add Soy sauce, mirin and sake and steep for 10 minutes without reducing liquid. Remove from heat and puree until smooth then cool. This sauce is best served chilled or at room temperature.
