4 tablespoons Blue Cheese
4 tablespoons unsalted butter at room temperature
2 shallots finely chopped
2 tablespoons chopped parsley
1/4 cup olive oil
2 pounds peeled Brandt All Natural
In a small bowl combine cheese, butter, shallot and parsley.
Preheat grill to high.
Brush steaks with olive oil and place on grill.
Cook on first side approximately three minutes.
Turn and cook approximately another three minutes depending on thickness of steaks for medium rare.
Season with salt and pepper and let rest three minutes before slicing against the grain.
Top with butter and serve.
